Philosophy:

"The credo at Schwabhof and thus the basis of our actions is "out of respect for nature". This approach is reflected in all areas of our farm: from organic farming according to Bioland guidelines, to animal welfare, to stress-free slaughtering and the purity of our final products. But the greatest role is played by animal welfare: our pasture-raised pigs live in groups outdoors all year round and can roam at will in 6 hectares of woodland and meadows, can burrow, wallow or relax. Only after 12 to 18 months of gentle rearing are our pasture-raised pigs slaughtered - in an EU-approved slaughterhouse in our village and without stress, violence or fear of death. In this way, incomparably aromatic, compact meat is produced, which we process into unique sausage specialties with natural spices and without additives or pickling salt."

The Story:

Even at a young age, it was clear that Thomas Schwab would one day inherit his uncle's farm. But the career prospects for a farm with 18 hectares of agricultural land and 15 hectares of forest were poor, so he initially decided to study food technology and work in the private sector. But the thought of the farm never left him. Finally, in 2014, he quit his job and started building a farm with traditional pastured pig farming. His inspiration in this was his father, whom he had often accompanied in his craft as a "brandy butcher" as a child. Brandmetzgers roamed farms primarily in the winter to perform home slaughters at farmers' homes. The appreciation for the animal and the way in which the pasture-raised pigs were slaughtered and completely processed there in a single day had already made a deep impression on him back then. Since March 2016, Thomas Schwab has now been able to market his first animals. He soon found a valuable partner in Thomas Sebald from the country inn "Zur Schmiede" in Lieritzhofen, who, as an EU-approved slaughterhouse just around the corner, supports him in stress-free slaughtering without transport routes.
