"Preserving the tried and true while being open to new developments" is our motto. That our butcher's shop would one day produce vegan sausage alternatives is something we ourselves would never have imagined until recently. But we dared to try to expand our regular range to include vegan products. After all, the market for plant-based alternatives to sausage products has been growing enormously for years. Since we ourselves don't even eat meat and sausage on a daily basis anymore, it seemed like a logical step. After extensive development and long trial and error, we are already receiving a lot of positive feedback: not only vegetarians and vegans are enthusiastic about our plant-based "liver sausage", cold cuts and sausage salad, or even the vegan "Leberkäse". The good response makes us happy and spurs us on to further expand this area and develop innovative and delicious plant-based products."
For more than 50 years, Stadtmetzgerei Bär has been firmly in family hands: founded in 1964 by Gertraud and Christian Bär, 25 years later the second generation, Klaus and Karin Bär, took over the business. After several conversions and adaptations of their in-house slaughterhouse, a major restructuring followed in 2019: Instead of their own slaughtering, the company has relied entirely on meat from the Bäuerliche Erzeugergemeinschaft Schwäbisch Hall (BESH). Since 2021, the third generation - Jacqueline Bär, Matthias Bär and Daniela Winter - has been increasingly involved in business management: It is their ideas and innovations that make the traditional family business fit for the future - including the idea of producing vegan sausage.
